This first of our 2019 History is Served dinners features the humble catfish, the 2019 Arkansas Food of the Year announced by the Department of Arkansas Heritage. First record of catfish in Arkansas was 1557 by a man known as the “The Gentleman from Elvas,” noting the fish with “great spines” in Pacaha, an Indian settlement that was in what is now Northeast Arkansas.
The Natural State is also the birthplace of the catfish industry, and catfish has a culture of its own in this state, with traditional sides debated and tall tales shared among fishermen. For this dinner, Scott Rains will upend what we think we know about this whiskered protein and offer up a contemporary take that will amaze your taste buds.
